Yesterday after school, about 4 pm (typical snack attack time), I ended up with several hungry people at my house. Not only did I have my kids and husband, but my teenage brother and sister stopped by. As is usual after a long day at school, they were all hungry. I ended up rummaging around the kitchen for a couple of minutes and came up with this little snack that was so perfect and turned out so yummy I had to share it. (p.s. I had to quickly grab photos with my iphone before they disappeared).
I cranked the oven to 400 degrees and cut pieces of whole wheat bread in half. I laid out all the bread on a parchment lined baking sheet. On half of the bread pieces I put 1 piece of prosciutto and 1 slice of sharp white cheddar. On the other half of the bread pieces I put a drizzle of olive oil. Put the tray in the oven for about 10 minutes or until the cheese is bubbly and the plain pieces are toasty.
On the plain pieces, I layered thinly sliced avocado, microgreens, salt and pepper and a drizzle of balsamic vinaigrette (some leftover for the night before). To make a quick balsamic: mix equal parts balsamic vinegar with extra virgin olive oil, add a touch of pure maple syrup, salt and pepper- done).
Besides the fact that these were so yummy, it was perfect for everyone. The kids had little prosciutto and cheese open faces, my sister and I had the avocado crostini and my husband had the bright idea of taking one of each and making a little sandwich (of which my little brother had several). So fun, so easy, so yummy. Happy Snacking! xo.
