a better chocolate bar

March 10, 2012

homemade candy bar These are really easy to make and a great treat to add to a school lunch or throw in your purse. They are chocolately and indulgent, with just the right amount of crunch. They are still a treat, but definitely better for you than anything you are going to buy on the candy aisle! I got the fun idea for these bars HERE

chocolate peanut butter candy bars

1/3 cup coconut oil
1/2 cup peanut butter (smooth or crunchy)
1/3 cup honey
1 1/2 cup old-fashioned oats
1/2  + 1/3 cup semi-sweet chocolate chips (divided)

Line a 8×8 inch pan with parchment paper. In a small sauce pan heat oil, peanut butter, and honey over a medium heat.  Once melted and fully combined mix in the oats and 1/2 cup semi-sweet chocolate chips.  Stir until the chocolate chips are melted.  Spread mixture out evenly in prepared pan. Sprinkle the top with the remaining 1/3 cup chocolate chips. Allow to cool completely in the fridge before removing from pan and cutting into individual bars. I wrap each bar up individually and store in the fridge.

Got some in the fridge right now.  I love the “healthier” version… or at least a candy bar that you can pronounce all the ingredients.  Thanks for posting!  Love your blog and recipes.

Thank you for this recipe. My chocolate bars are currently in the fridge cooling. I can’t wait for the first bite of all that chocolate. :) Such an easy recipe and sure to be a hit with my two picky eater children. Thanks!
