Bagel with Hummus and Veggies

Bagel with Hummus and Veggies

This sandwich tastes good with a number of toppings, use what you have on hand.

  • 1       whole grain bagel, toasted
  • 1/4   cup       hummus
  • 4       slices    cucumber
  • 3       slices    red bell pepper, optional
  • 2       slices    pickles, optional
  • 3       rings     jarred sweet banana pepper
  • 1/4   cup       alfalfa sprouts or baby spinach leaves
  • salt and freshly ground black pepper, to taste

Procedure

1    Smear toasted bagel with hummus and top with remaining ingredients.

    We tried this with a whole wheat bread, too. They were really good… even my husband thought so.

    This was great!  I didn’t have the banana peppers so I used pepporchinis.  Really good!
