Banana Bread

This batter has a bit of sugar and a couple of eggs, so I can’t claim it is totally Green, but it is whole wheat and virtually fat-free.

2 1/2 cups whole wheat flour (you can do 2 cups whole wheat flour and 1/2 cup wheat bran)

1/2 tsp baking soda

1/2 tsp salt

1/4 cup brown sugar

1/2 tsp cinnamon

1/2 cup very hot water

5 dates (or you can use 1/2 cup prunes)

2 eggs

1/2 cup unsweetened apple sauce

4 bananas

1 tsp vanilla

Preheat the oven to 325 degrees.

In your vitamix, or blender,  pour in the hot water and dates (or prunes), set aside. Combine the dry ingredients in a large bowl and set aside.  Turn on your vitamix to a number 7 and blend the dates in the water for about 20 seconds. Add the applesauce and the bananas. Blend again at a number 7 for about 20 seconds. Add the eggs and the vanilla and blend at a number 4 for about 10 seconds. Pour the blended mixture into the flour and stir just until combined. Pour in a grease loaf pan or muffin tins. Makes 1 loaf or 12 muffins. Bake at 325 degrees.  About 1 hour for bread and about 25 minutes for muffins.

If you really want to make this a special treat for your family, sprinkle a couple of chocolate chips right on top before baking.

    I love your website. I just happened upon here kind of accidentally. I am an aspiring vegan so appreciate finding more resources to help me make the transition. I was wondering why you choose to use eggs rather than an egg replacer or flax seed. I have found they are very easy replacements in baked goods. No one can tell the difference. Is there a reason you decided to use eggs?

    Sabrina- I am so glad you found my site. I hope it will be a great resource for you. That is a very good question you ask about the eggs. I agree with you that it would have been much healthier to use a replacement like flax goop, but I left the eggs in this recipe because a lot of my subscribes are working their way toward a greener diet, so sometimes I will put up a recipe that is almost green it help people take one step at a time. I think it is wonderful you are on your path to becoming vegan, you can definitely make this vegan by replacing the eggs with 2 tbs ground flax mixed with 6 tbs water (let it set up together for about 5 minutes). This bread does come out a bit denser with the flax instead of the eggs. Please keep me updated on your transition!
