Don’t let the popular advice to “avoid potatoes” deter you from getting your fill of this season’s sweet potatoes. Sweet potatoes are packed with health benefits, such as blood sugar regulation, anti-inflammation, and antioxidant capacities. Orange-fleshed sweet potatoes are also an incredible source of beta-carotene or vitamin A.
These candied fries are one of my favorite side dishes, but, more importantly, they are my kids favorite way to eat sweet potatoes. It makes me smile to think about all the good vitamins and minerals they are happily chowing down.
Theses fries are soft on the inside and crispy and golden on the outside. The maple syrup and natural sugars from the sweet potato caramelize in the oven for an incredibly sweet take on the French fry. Absolutely no ketchup allowed.
