Easy Poppyseed dressing over fresh Spinach Salad

Salads are wonderfully healthy addition to any meal, as long as they are not drenched in processed, fattening dressing.  Making your own dressing can seem like too much time and effort, but this dressing is a snap to make. When you make your own salad dressing, it tastes better and it is healthier because there are no added chemicals and you control the salt and sugar. Once you make this, you will never want to waste your money on store-bought poppyseed dressing again. This spinach salad is fast, easy, and delicious.

Poppyseed dressing:

1/4 cup canola oil

1/4 cup white vinegar

1 1/2 Tbs agave nectar

1/4 tsp onion powder

1/4 tsp mustard powder

1/4 tsp garlic powder

1 tsp poppyseeds

pinch of salt

Whisk together well.

Spinach Salad:

6 cups fresh baby spinach leaves

3-4 button mushrooms, chopped

1/4 cup sliced almonds

1/3 cup blueberries

1/8 cup thinly sliced red onion

this amount of salad serves about 2-3 people. Pour desired amount of poppyseed dressing over the salad and toss just before serving. Careful not to overdress the salad.
