As Thanksgiving draws near, it’s time to start planning your fabulous feast. In my mind, the Thanksgiving meal isn’t complete without a sweet potato side dish. To be honest, I never liked the traditional Sweet Potato Casserole with brown sugar and marshmallows. But, if you are a fan of that sugar crusted staple, you are still going to be blown away by these simple and sweet variations.
1. Maple Glazed Sweet Potato Wedges
These are fantastic; my new favorite way to enjoy the humble sweet potato! If you don’t wow your guests with these on Thanksgiving, save this recipe for any day of the week. These wedges are soft on the inside and crispy and golden on the outside.
- 2 tablespoons extra virgin olive oil
- 2 tablespoons pure maple syrup
- 1/2 teaspoon salt
- 1 lb sweet potatoes (about 3 sweet potatoes)
Preheat the oven to 400 degrees. Peel the sweet potatoes and cut into long thin wedges, about 6 or 8 wedges per sweet potato. In a mixing bowl, combine the sweet potato wedges, extra virgin olive oil, maple syrup, and ¼ teaspoon salt.
Lay wedges out on a single layer on a baking sheet with parchment paper. Drizzle any remaining oil and maple syrup in the bottom of the bowl over the top. Bake for 40-45 minutes, flipping after 20 minutes. Remove from oven and sprinkle with remain 1/4 tsp salt (if desired). 
2.Fluffy Baked Sweet Potatoes
If you have a lot of time consuming dishes you are making this holiday, scratch the sweet potatoes off your list by making this simple side. After the sweet potatoes bake for so long, they turn incredibly sweet. They literally caramelize and the insides become soft and fluffy. Resist taking them out of the oven until they are dark in color, extremely soft, and most likely starting to leak goo out of their skins.
- as many medium sized sweet potatoes or yams as desired
Preheat oven to 375 degrees. Poke several holes in the sweet potatoes with a fork. Place on a baking sheet lined with tin foil. Bake for about 3 hours or until you are probably thinking they are overdone. Being careful not to burn yourself, scoop out the soft insides and eat. No need for any salt, fat, or sugar – I’m not kidding.
