Happy St. Patrick’s Day! The custom this day is to promote green colors, wear green, eat green, decorate with green- something I can definitely do!  Today, I am celebrating with a couple of green drinks. Whether you decide to juice or blend, they are a healthy, festive, and delicious treat. What a great way to get your kids to eat their spinach- with St. Patrick’s Day apple juice!

St. Patty’s Favorite Apple Juice (or Spinach Apple Juice)

  • 2 cups organic baby spinach leaves
  • 1 organic apple, cut into pieces
  • 1/2 lemon, peel cut off

Put the spinach leaves through the juicer first, than juice the apple and lemon half. Best served cold or over ice.

Leprechaun Elixir (or Apple Green Smoothie)

This smoothie is simple, but delicious. It is a beautiful bright green color and tastes like apples. I have a vitamix so I can leave the peel on my apple and throw my flaxseeds in whole, if you don’t have a strong blender, use ground flaxseeds and peel your apple.

  • 1 banana
  • 1 organic apple, cored
  • 2 cups fresh organic spinach
  • 2 tsp flaxseeds
  • 1 1/2 cups crushed ice

Blend until very smooth.

    “St. Patrick, brought Ireland out of the dark ages by bringing Christianity back to the country.” What the…? Christianity (particularly Roman Catholicism) is the main reason why the Middle Ages were ever called “dark” by historians.
