Mint Limeade

September 6, 2011

In the spirit of full disclosure, this is not totally Green, but it is fresh and homemade and such a yummy treat on a hot summer day.

  • 1 cup sugar
  • 1 cup water
  • sprig of mint
  • 1 cup fresh lime juice or a bit more if your like me and you want it extra tart
  • 2 cups ice
  • 2 cups water
  • lime slices and mint leaves for garnish
Make a mint infused simple syrup by combining 1 cup water, 1 cup sugar, and a sprig of mint in a pan over low heat. Stir occasionally until the sugar has dissolved. Remove from heat and set aside.
Juice fresh limes for 1 cup lime juice. In a large pitcher, combine 1 cup lime juice, the simple syrup. Add the remaining ingredients and stir.
