no-bake protein bites

protein bites

  • 1 cup rolled oats
  • 1 cup unsweetened coconut flakes
  • 1/2 cup chocolate chips (or dried fruit)
  • 1/2 cup natural peanut butter (or preferred nut butter)
  • 1/2 cup ground flaxseed
  • 1/3 cup honey
  • 1 tsp. vanilla

Stir all ingredients together in a medium bowl until well combined.  Let chill in the refrigerator for about 30 minutes.  Once chilled, roll into balls of whatever size you would like.  (Mine were about 1″ in diameter.)  Store in an airtight container and keep refrigerated.

Makes about 20-25 balls.

    of course you can omit the coconut. You might have to play with the measurements just a bit to get the right consistancy, but I think it would be great to use some sunflower seeds, dried cranberries or cut up dried apricots.  Consider adding a bit more ground flaxseed and oats for the right texture.
