This is my new favorite thing to eat for lunch right now. I have had some version of this everyday for a week!
1/2 whole wheat bagel, lightly toasted (or not)
1/2 avocado, smashed and smeared onto the bagel
sprinkle of salt and freshly ground black pepper on top of avocado
6 slices cucumber, peeled (or not) layer on top of avocado
1 tsp raw hemp seeds, sprinkle over cucumbers
4-5 slices of red bell pepper or 1/4 cup shredded carrots go next
1/3 cup fresh sprouts piled up on top (I used lentils I sprouted myself, so good!)
note: make sure to have a napkin handy!
