I adore french fries, but I hate the fat and grease (and who knows what else) that often accompany them. For me, these fresh homemade fries are all I need. You don’t have to follow this recipe exactly, use as many potatoes as you want and season accordingly.- 3 russet potatoes
- 2 teaspoons salt
- 3 tablespoons extra virgin olive oil
- chopped fresh parsley, for garnish (optional)
Preheat oven to 450 degrees. Wash the potatoes and cut into thin sticks – very important. Try to get them about 1/4 inch square sticks. Rinse the fries and dry well with a clean kitchen towel. In a large bowl, toss with oil and salt. On a parchment lined (optional) baking sheet, lay out the fries in a single layer. Bake for 20-25 minutes. Sprinkle with parsley and serve hot!
