Peach Mango Smoothie

August 3, 2011

This is so good. I have been buying lots of peaches and nectarines right now and am really enjoying them in my smoothies. I can’t believe how yummy this smoothie is considering how many different kinds of greens I stuffed in there!

  • 1 peach or nectarine
  • ¼ cup of cucumber pieces
  • 1 very large handful of kale leaves
  • ¼ cup parsley leaves
  • ½ orange juice
  • ½ cup crushed ice
  • 10 oz frozen mango (about 1 ½ -2 cups)

VitaMix it up.

makes about 3 cups

Mary, I notice orange juice in your smoothies. Why do you choose orange juice for the liquid?

I like the citrus flavor that orange juice brings. I think it helps mask any bitterness from the greens. I don’t usually ever use more than 1/3-1/2 cup and if I am using store bought, I try to get the closest thing to fresh pressed. I will often use water to thin out a smoothie as well. Sometimes I will just peel a whole orange and throw it in. What do you like to use?

I’ve been trying different things–soy milk, coconut milk, and almond milk. Do you ever use coconut milk? I’m going to try some oranges and/or orange juice.
