Queso Fake-Out Dip

This recipe is actually in The Green Diet (pg 64), but I made it the other day and was reminded how finger-lickin good it is. It is so easy and quick, it is a no-brainer when you have a family (Doug) that wants a snack while watching the NBA finals.

1  can (15 oz)  cannelloni beans, rinsed and drained

1  Tbs  extra-virgin olive oil

1  clove  garlic, minced

2  Tbs  fresh lime juice

3  Tbs  sun-dried tomato pieces (4-5 pieces), I prefer packed in oil

1/4  cup  water, or as needed

coarse salt

Place the beans, oil, garlic, lime juice, and sun-dried tomatoes in a food processor and process until the mixture resembles coarse meal.  Slowly add a bit of the water and process into a smooth paste (if mixture is too thick, add more water). Taste for seasoning and add salt if desired.

Yield: 1 1/2 cups dip
