Last week, I received a wonderful package in the mail. I love getting things in the mail, especially if they have something fun inside, like this one. Whitney, at IndriVanilla, had sent me some natural Java vanilla beans. They were fresh, chalk full of seeds, and smelled delicious. I thought they would make a great combination to my fresh Utah peaches, and they did!
1. Wash and pit the peaches, then slice into wedges.
2. Add the peaches and remaining ingredients (including the empty vanilla bean pod) to a saucepan, bring to a boil, reduce to simmer on low for about 30 minutes.
3. Serve alone, or spooned over oatmeal (recipe follows)
Combine the water, oats, and salt in a pan, bring to a boil. Reduce to a simmer and cover. Simmer for 15-20 minutes.
