I love fajitas and they are so easy to make. We just recently returned from a trip to Mexico where we enjoyed some fabulous fajitas. I couldn’t help making them again when I got home.
1 Tbs canola oil
2 bell peppers, seeded and sliced (any colors)
1 onion, sliced
1 clove garlic, minced
6 white mushrooms, sliced
1/2 tsp cumin
1/2 tsp coriander
1/4 tsp paprika
1/8 tsp cayenne (or more it you want it really fiery)
1/2 tsp salt
1/4 tsp freshly ground black pepper
2 tomatoes
1 1/2 cups shredded cabbage
6 whole wheat tortillas
For the spicy avocado relish:
2 avocados
1 large or 2 small jalapenos, seeded and diced
1 lime
1/2 tsp salt
In a large skillet over medium heat add the oil, bell peppers, onion, garlic, and mushrooms. Cook for about 10 minutes until just tender. Add the cumin, coriander, paprika, cayenne, salt and pepper and cook another 2-3 minutes.
Meanwhile, dice the tomatoes and set aside. Juice the lime in a small bowl. Dice the avocado and add to the lime juice. Mash the avocado with a fork. Add salt and jalapenos to the mashed avocado and mix well.
Heat the tortillas in a warm dry pan.
To assemble-
Lay 1 tortilla on a plate. Add the pepper, onion, mushroom mixture in a line across the tortillas. Top with tomatoes, cabbage, and avocado relish. Roll it up like a burrito and enjoy.
