the simplest pico de gallo salsa ever

I love Mexican food; and chips with salsa is one of my favorite snacks. I love making (and enjoying) fresh salsa in the summer with farmers market produce. This salsa is flavorful, healthy, and simple. Add a spoonful of this along with fresh guacamole to a homemade taco- wowza that’s good!
pico de gallo
  • 1/2 large white onion
  • 5 plum tomatoes
  • 1 handful fresh cilantro
  • 1 lime
  • salt and pepper
  1. Wash and cut the tomatoes in halve vertically. Give them a good squeeze over the sink or garbage to get rid of some of the seeds and juices. Place cut side up on a cutting board. Sprinkle with a pinch of salt. Lay out a kitchen towel or paper towel turn the tomatoes cut side down on the towel to drain.
  2. Meanwhile, dice the onion and the cilantro leaves. Add to a mixing bowl. Cut lime in half and juice over the onions and cilantro.
  3. (this is the most annoying part) Cut the tomatoes up into very small squares and add them to the bowl. Sprinkle with a good sized pinch of salt and a few hearty cracks of the pepper shaker. Stir to combine. Let marinate for about 30 minutes before serving. Taste and add salt and pepper if necessary.
