My friend Nancy has been Green now for 2 weeks- I am so proud of you Nancy! She asked me for some topping ideas for her baked potatoes.
There are lots of fun things you can do with a baked potato. Potatoes tend to be a bit bland so the key is to add lots of flavor.
For something very simple, drizzle with extra virgin olive oil and salt and pepper, but it you want to jazz it up…
1. Rum Tum Ditty -
Saute 1 cup chopped onion in a drizzle of olive oil.
Add 1 can (15 oz) whole tomatoes to the pot, but squish the tomatoes all up with your fingers first.
Add 6 oz whole kernel corn, a pinch of thyme, salt, and pepper to the pot. Simmer for 10-15 minutes.
Split open 2 -3 baked potatoes and spoon Rum Tum Ditty right in. Garnish with fresh chives.
2. Mushrooms. Over medium-high heat, add a drizzle of olive oil and sliced mushrooms (whatever kinds you like). Add 1-2 tablespoons brandy. Saute for 10-12 minutes until the mushrooms are tender. Add salt and pepper to taste and spoon into baked potatoes.
3. Pesto! If you are a fan of pesto, it is quite a treat to smear fresh bright pesto all over your baked potato. I am not a huge fan of pine nuts so I like to make my pesto with walnuts.
