Taking only 15-20 minutes from start to finish, this soup is a no brainer on a busy winter day. I use my Vita-Mix to blend it, I can fit all the soup in the container at once. My Vita-Mix is one of my favorite things in the kitchen. (if you order one, use the code 06-004867 for free shipping!)
1 tbs olive oil
1/3 cup chopped onion
1 carrot, peeled and chopped
1 celery stalk, chopped
2 cloves garlic, minced
2 cans (15 oz each) cannellini beans, rinsed and drained
3 cups vegetable broth
1 tsp fresh thyme leaves
Kosher salt and freshly ground black pepper
In a heavy bottom pot, over medium high heat, saute onion, carrot and celery in olive oil for about 5 minutes. Add the beans, thyme, and broth. Bring to a boil then reduce to a simmer for 10 minutes. Pour soup into vita-mix or other blender or use immersion blender. Blend soup at speed 4 (for vita-mix) for about 15-20 sec. You want the soup to be slightly blended but still have lots of texture. Season with salt and pepper and serve with a few thyme leaves and a drizzle of extra virgin olive oil over top.
