How to go Almost GREEN for 7 days- the 1 Week Challenge!

A friend of mine asked me to put together 7 days of menus and recipes for her and her family (that’s 21 recipes!). I thought it was such a great idea for all who are interested in better health and eating Greener.  The recipes are almost green, I do use a very small amount of sugar, milk, and eggs in a couple of the recipes.

I want everyone to try this! If you will follow this meal plan for 1 week, you will be amazed at how wonderful you feel and what a big difference it is already making. It is easy because everything is all planned out- I even made you a shopping list. All you need to do is make the meals, and they are fairly simple and very delicious. Plus, you will end up with 21 new and healthy recipes.

    Just finished day 1!!! I am loving it.

    Shopping for all the ingredients the first time took some time but that's just because I had to get so much. The next time around won't require all the basics.

    I loved the pancakes, hummus sandwich, and the hearty pasta! So delicious.

    I made the sandwich for Art to take for lunch, and he loved it. My kid had everything we did except for lunch (because I packed school lunches for them) and they ate everything!

    Why didn't I do this sooner?

    I am so happy to hear day 1 was a success! (The pancakes and hummus sandwich are staples around here.)

    It's a lot of pressure for me to make sure I wrote good recipes esp because you had to make a special trip to the store. I hope you like the rest of the week just as much!

    I'm converted! This is the way to go. I never felt hungry, quite the opposite really. All the recipes are so delicious, fresh, and satisfying.

    I did do way more prep work than I was doing before but my entire family is eating healthy!

    Thank you so much for putting this together. I don't think I can thank you enough.

    I keep telling everyone that they need to try it!!

    Hi! those are some long hard hours! my biggest suggestion is to be prepared and take food with you to work. Do you have anytime before work to go for a walk? Do you have a good blender you could use to make yourself a green smoothie before or/and work? That might be the single more beneficial thing for you to do. You body with be so grateful and happy for the boost. Let me know what I can do to help you on your journey…. so happy you’ve joined us!
